Tonight I wanted to make a quick, easy, relatively healthy dinner. I was kind of over the grilled steaks and chicken, because my hubby has been going crazy on the grill this past few weeks.
So I decided on spaghetti. Prepped and ready to eat in under 30 minutes, with sneakily-large portions of veggies!
You will need:
– 1 lb. extra lean ground turkey
– 1 box whole grain spaghetti pasta (about 13 oz)
– 1 jar pasta sauce (about 24 oz)
– 3 zucchini (chopped)
– 2 tsp garlic salt
– 1 tsp pepper
– 2 tsp crushed red pepper
– 2 tsp fresh or dried basil leaves
– Shredded parmesan cheese
– French baguette (optional)
Fill a large pot with water and bring to boil (this is for your pasta).
While waiting for the water to boil, roughly chop the zucchini (or dice it finely if you need to disguise it for picky eaters).
Now you can start browning the meat in a large skillet. If the meat is very lean, there will be little-to-no grease so you won’t need to drain anything, you can mix and serve everything right out of that skillet.
When the meat is almost browned, add your chopped zucchini, pasta sauce, and all spices.
The pot of water should be boiling now, so add pasta noodles and set the timer for 8 minutes.
Allow spaghetti to simmer during the 8 minutes that the pasta is cooking, stirring occasionally and adjusting seasonings to taste. When pasta is done, drain and serve warm, topped with the spaghetti, shredded parmesan cheese, and a side of french bread baguette.
